Cooking classes by Tomoé, or a journey to the land of flavors

Welcome to the refined and balanced world of my French-Japanese fusion cuisine. I am Japanese and have been passionate about gastronomy for many years.
I was trained in French gastronomic cuisine in Japan by renowned chefs and I now share my expertise through cooking classes.
Through my workshops, I invite you to an immersion to discover the techniques and ingredients of culinary heritage and to taste your creations in a friendly atmosphere.

The concept of Ichijû Sansai


At the heart of Japanese culinary tradition lies the concept of Ichijû Sansai – “a soup”
and three accompaniments" – embodies the perfect balance between simplicity, diversity and
harmony.
This ancestral model meets the body's needs while cultivating pleasure.
Meaning: varied portions, balanced flavors and elegant presentation.

What you will learn:


• Preparing Japanese rice: rinsing method, cooking and plating.
• Make miso soup and discover its variations.
• Prepare the dashi, the fundamental broth of Japanese cuisine.
• Put together a complete Ichijû Sansai meal to enjoy together.

THE CLASSES

Japanese dishes

Sushi : Maki, Inarizushi,

Donburi : (topped rice bowl)

Chicken : Kara-agé, Tériyaki, Tsukimé, Oyako-don

Beef : Gyû-don, Tataki, Niku-

jaga, Hanbâgu, Soboro

, Vegetables and eggs : Tempura, Age-bitashi, Gyoza, Aji-tama, Chawan-mushi, Omurice, Okonomiyaki

Pork : Kakuni, Tonkatsu, Shôga-yaki

Fish: Sashami, Yaki-zakana, Saba misoni, tuna tataki

Noodles : Ramen, Soba, Udon, Yakisoba

The Japanese meal

A soup, often a miso soup rich in umami, hydrating and digestive.

A bowl of white rice, the basis of daily energy.

Three side dishes (okazu): fish, meat, egg, raw or cooked vegetables
fermented.

€30 per person

Informations Pratiques:

  • Participation : Un minimum de 2 participants est requis par session.

  • Tout inclus : Le tarif s'entend par personne et comprend l'ensemble des ingrédients nécessaires au menu.

  • Lieu : Les cours se déroulent principalement dans la cuisine de Tomoé.

  • À domicile : Je me déplace également chez vous ! Des frais de déplacement s'appliquent (2€/km AR).

    • Exemple : pour une distance de 20 km, comptez un supplément de 40€.

  • Réservation : Le paiement s'effectue à l'avance. Pensez aussi à notre carte cadeau pour offrir un cours !
